Crispy Fried Egg to Start Your Day

Perfection from two minutes in a hot pan

Crispy fried eggs are the in thing right now. The best part is they only take two minutes to make.

Get your pan nice and hot. I recommend a small stainless steel pan so the whites don't move around too much.

When you can feel nice, even heat six inches above the pan, pour in some olive oil. I used three spoonfuls of bacon grease for two eggs at a time.

Once it starts to smoke, crack the egg on its side using your counter or cutting board. Break it open close to the surface of the pan and watch the whites bubble and burst.

Two minutes after this, remove from the pan and plate.

The whites will be smooth with delicious crunchy edges and the yolk will be bright and runny- perfect for dipping your toast into.

Season with salt and pepper and enjoy a perfect egg to start your day.
