Guacamole Salsa
Cucumber, Avocados, and Limes Star in this Salsa

This salsa packs a bright, aromatic vibrance with a fiery backheat. It's refreshing but packs a subtle kick.
This is a good way to stretch store bought guacamole and your guests might just eat it all with a spoon.
It's perfect on tacos, in burritos, or with nachos.
Here's what you need:
1 cucumber
1 container of guacamole
1 yellow onion
2 limes
Sea salt
1/4-cup cilantro
2 jalapeno peppers
Start by peeling the cucumber. Cut it into wedges (lengthwise from one end to the other), then cut out the seeds.
Chop it into small cubes. It's up to you how chunky you make it.
Next, chop your onion. Again, it's up to you how chunky you want it.
Mix both with a tub of guacamole- I prefer it spicy.
Roll two limes back and forth between your palm and counter. Cut it in half and squeeze all of the juice and pulp into the bowl of ingredients.
Season it generously with sea salt.
Chop and dice some cilantro and mix in, then take some pickled jalapeno peppers and chop it up.
Mix it all together and enjoy- it gets even better the next day and beyond.
